Abstract

Penelitian ini bertujuan untuk mengetahui pengendalian proses produksi Tahu Tempe pada Pabrik Marcel Kotabaru Kecamatan Pulau Laut Utara Kabupaten Kotabaru. Jenis penelitian yang digunakan dalam penelitian adalah penelitian deskriptif kualitatif. Data yang dianalisis bersumber dari wawancara mendalam dan observasi terhadap 1 orang informan kunci dan 1 orang informan non kunci. Hasil penelitian menunjukkan bahwa pengendalian proses produksi yang dijalankan oleh Pabrik Marcel Kotabaru telah menetapkan pengendalian proses produksi untuk menjamin kelancaran proses produksinya. This study aims to determine the process control of Tempeh Tofu Production at Marcel Factory,Pulau Laut Utara District,Kotabaru Regency. The type of research used in the research is qualitative descriptive research. The data analyzed were sourced from in - depth interviews and observations of one key informant and one non - key informant. The results of the study show that the control of the production process carried out by Marcel Factory has determined the control of the production process to ensure the smooth production process.
